Onion and Black Pepper Rice




Ingredients:

  • 1 cup basmati rice

  • 2 cups water

  • 2 tablespoons oil

  • 1 teaspoon mustard seeds

  • 1 onion, finely chopped

  • 1-2 green chilies, slit

  • 1 teaspoon black pepper powder

  • Salt to taste

  • Fresh coriander leaves for garnish



Instructions


Cooking Rice

1.      Rinse the rice under cold water until the water runs clean. Drain and keep aside.

2.      In a pot, add 2 cups of water and bring to a boil adding salt to it.

3.      To the boiling water add the rinsed rice close with a lid and cook on low heat until the rice is tender and soft.

4.      The rice can be cooked within 15-20 minutes, set aside once done, and fluff it with a fork.     


Onion and Black Pepper mix

1.      Heat a pan and add oil to it. Add mustard and once it starts spluttering add chopped onion and slit green chilies to it. Fry them until they turn golden brown.

2.      Now add the required salt and sprinkle the required black pepper. Combine Rice and onion mix

1.      Add the already cooked rice to the above mix and toss well to spread it evenly.


Garnish and Serve:

1.      Garnish the Onion and Black Pepper Rice with freshly chopped coriander leaves for freshness.

2.      Serve hot as a standalone dish or pair it with your favorite curry or side dish for a complete meal experience.
